2. Collard greens: Rich in antioxidants with more than 70 percent of the recommended daily allowance (RDA) of vitamin C.
Asparagus: Rich in protein and an excellent source of potassium.
Red bell pepper: Contains antioxidants and lycopene, which may have anticancer properties.
Broccoli: Anticancer properties and an excellent source of vitamins A, C and K, along with folic acid and fiber.
Cabbage: A good source of calcium, magnesium and manganese, with anticancer properties.
Carrots: Highest source of carotenes, which may help guard against macular degeneration and senile cataracts.
Celery: High in vitamins A and C and a good source of fiber. May help lower cholesterol.
Cucumbers: Good source of vitamins A and C and fiber, and effective in reducing under-eye swelling and cooling sunburn.
Eggplant: Excellent source of fiber and may help lower cholesterol. Skin contains antioxidants.
Kale: Excellent source of B6, C and carotenes and good source of fiber and calcium.
Lettuce: Good source of vitamin K. ad excellent source of vitamins A, B1, B2, C and folic acid. Romaine is the most nutrient-dense variety.
Onions: May decrease blood lipids, prevent clot formation and lower blood pressure and blood sugar.
Spinach: Nutrient-dense source of vitamins C and K. Excellent source of iron, and rich source of lutein, good for eye health.
Sweet potatoes: Excellent source of carotenes, vitamins B6 and C and fiber. Contains antioxidants. One of the "good" starches.
Potatoes: Most nutrients are found in the skin. Good source of fiber, potassium, niacin and pantothetic acid.
